Lemon and Pepper Tilapia

Fresh Un-frozen Tilapia
(1) Lemon
Dried Basil
Fresh Ground Pepper
Dried Oregano
Garlic Powder
Brown Rice

Cover tilapia with 3/4 fresh squeezed lemon juice, sprinkle with dried basil, dried oregano fresh ground pepper and garlic powder. Broil on low for 10-15 mins or until fish flakes apart. (Be careful not to use too much garlic powder or it will over power the dish). Serve over a bed of brown rice and garnish with the remaining lemon slice. This dish is usually accompanied by your choice of grilled or steamed vegetables.

Sherbet

(8) Frozen Strawberries (hulled)
(1) Large Frozen Banana (peeled)
(1) Medium Mango
(peeled, cubed then frozen)

Splash of Orange Juice

 

*To prepare your mango; peel, cut into cubes, and freeze.

 Blend each frozen fruit individually with a splash of orange juice. Gently stir them all together in a freezer safe bowl. (Don’t over mix to ensure  preservation of  individual flavors). Place in freezer until firm, but not completely frozen and serve.
